Ice Wine

 

This most unique wine dates back to 1794 (Germany) and can only be consistently produced in Canada.

Icewine is single-handedly opening European doors and allowing our commercial industry's other VQA wines to follow.

The process involves leaving Vidal, Cabernet Franc, Gewurztraminer or Riesling on the vine to freeze. Nets are placed over the grapes for bird protection and at temperatures between -9 and -10 degrees Celsius the frozen grapes are picked and pressed. Yields are 13-17% of regular harvest. Our Icewine is made from Vidal grapes.

Late harvest is a similar process with the difference being the harvesting temperature. The parameters for this wine are -4 to -7 degrees Celsius and the yield is between 27-37% of regular harvest.

Our Juice is normally picked in January. We are in the hands of Mother Nature, so Picking times can be as early as mid December, or as late as the end of February. Occasionally the crops do not turn out at all, due to freeze/melt cycles which promote molding, or to warm of Winters. This can be a problem for our supplier, as they are next to the Niagara River, and the water from the river stays relatively warm.
