Spooky Pumpkin Ale

Just in time for Halloween, here's a spooky, mildly
spiced ale to sip while you're scaring the trick-or-treaters that come to
your door. Gomez and Morticia would be proud!
Ingredients

1 Brew House Pale Ale kit

500 g 10L Crystal malt

28g Cascade hops (14 g for 5
min. boil, 14 g for 5 min. steeping)

½ tsp ground dried ginger

1 vanilla bean, chopped

2/3 cup corn sugar for bottling

500 g honey
-
1 large can pumpkin pie filling
(plain)

1 tsp ground cinnamon
-
½ tsp ground nutmeg
-
¼ tsp ground allspice
-
½ tsp Irish moss
Procedure
- Crack your grains and place them in a grain
bag.
- Add grain bag to 8 litres of cold water in a
12 litre (or larger) pot. Bring to a boil and immediately remove grains.
- Take the pot off the heat and add honey and
pumpkin purée. Stir thoroughly to dissolve and return to heat.
- When mixture boils add 14g (half the package)
of Cascade hops, all the spices and the Irish moss. Boil for 15 minutes.
- Remove from heat, add the remaining 14g (other
half package) of Cascade hops and steep for 5 minutes.
- Cool and use the liquid to make up the 23
liter volume of the kit.
- You should add an extra 2 litres (25 litres in
total) of water to your primary fermenter to allow for the amount of
pumpkin residue left behind at first racking. Do not forget to add
Package #1!
- Add your yeast to your primary fermenter.
From this point, follow the Brew House instructions
for secondary fermentation.
